Place the Chappatis on a pre-heated cast iron skillet or
large skillet. Cook for 30-60 seconds on each side, until
light brown spots and bubbles appear. The cooking temperature
is the critical element to success.

Magical
Indian Chappatis
This
is the East Indian counterpart of a tortilla. As part of
the staple of the diet in India, people eat Chappatis often,
using them to scoop the food from their plates, instead
of using utensils as we do in the West. These are one of
my favorite things to make because I always have childlike
wonder when I watch unleavened dough bubble and become something
it wasn't when I started. Not only fun and fast to make,
but delicious and nutritious! This is a great activity to
involve family members in the joy of cooking.
- 2
c. whole wheat flour
- 1/2
t. sea salt
1 T. herb/spice flavoring of your choice
- 1/2
c. water
- 1/4
c. oil of your choice
1.
Set aside about 1/4 cup of the flour to use on the countertop
in rolling out the dough.
2. Add together all the dry ingredients and then add the
water and oil and mix them together.
3. Take the mixture out of the bowl and knead for 5 minutes
on the floured counter until the dough is smooth and elastic.
4. Divide the dough into small balls, about the size of
a half-dollar. Roll them out as thinly as you can.
