In addition to numerous stops on various Caribbean Island,
the cruise will sail the Orinoco river for 3 days. Our Amazon
River Cruise departs Dec. 21, 1999 and returns Jan. 4, 2000.
Optional extensions are planned to the Amazon jungle to
visit with shamans and explore and study the medicinal flora
and fauna of the Amazon. Visit exciting Rio de Janeiro and
see the preparations for the Millennium Carnival. Our cruises
will feature some top speakers/lecturers in the field of
Health/Wellness for the Body/Mind and Soul. We will have

Recipies From Around The World

that you may have come across in your worldwide travels
Or maybe your favorite recipe from a country that you have
not had a chance to visit yet.
Try
our “Lean and Mean Potatoes au Gratin” This recipe
was submitted by a mindbodytravel subscriber who used to
reside in France.
Lean and Mean Potatoes au Gratin
- 3
½-4 pounds thin-skinned potatoes (red or yellow)
- 4
cups vegetable or chicken broth.
- ¾
tsp. ground white pepper
- ¾
tsp. ground nutmeg pinch of salt
- ½
cup shredded Gruyere or Parmesan cheese,
Preheat
oven to 425 temperature. Peel the potatoes and slice into
1/8 to ¼ inch thick slices into a casserole, measuring minimum
12 in by 3 in. depth. Mix all ingredients except cheese.
Pour over potatoes. Bake in the oven until potatoes are
very tender when pierced with a fork., appox. 1 hr to 1hr
15 minutes. While potatoes are baking and getting dryer,
tilt casserole and baste potatoes with the broth . Sprinkle
the cheese on top and continue baking until it melts and
is lightly brown. Appox. 3 to 4 minutes. Let the casserole
sit and cool for about 5 to 7 minutes. The remaining juices
will also be absorbed by the potatoes.
We Recommend: Serve with roasted vegetables and boiled or
broiled Halibut.
