finalization of the details for our MILLENNIUM CRUISES are
drawing near

when we made the FIRST announcement in our previous newsletter.
We will keep you updated. Please email or call us and ask

your space on either cruise.
Our
Caribbean Cruise will depart on Dec. 22, 1999 and return
on Jan 3, 2000. Our Amazon River Cruise departs Dec. 21,
1999 and returns Jan. 4, 2000.
Our
cruises will feature some top speakers/lecturers in the
field of Health/Wellness for the Body/Mind and Soul. We
will have panel discussions, workshops and seminars, musical
entertainment and lots of fun.

SACRED
MUSIC FESTIVAL IN MORROCO
Experience the Heart of Music and the Rhythm of life! On
May 28, traveler from all over the world will meet in the
Holy City of Fez, Morocco for the 5th Annual World Sacred
Music Festival. Dedicated to the theme of Faith, Mysticism
& Reason, we will enjoy performances by master musicians
from both Western and Eastern sacred music traditions. Dr.
Carlos Warter will give a lecture on The Return of
the Sacred. We will experience 8 days of the music
of Myriam Makeba, Liz Combs and the Five Blind Boys of Alabama,
Rostropovitch with the Orchestra of Cannes, Provence Alpes
Cote dAzur and music from Israel, Pakistan. Morocco,
Senegal, Egypt, Armenia Great Britain and much more. In
addition we will enjoy touring Morocco and lots of great
food.

Healthy
Travel Recipes
We
feature a "Healthy Travel" Recipe from around
the world in our newsletter. We would like for you to be
a part of our newsletter by submitting a "Healthy"
and exciting recipe that you may have come across in your
worldwide travels Or maybe your favorite recipe from a country
that you have not had a chance to visit yet.
Try our Moroccan White Bean Stew. This recipe was submitted
by a HealthyTravel.net subscriber who recently visited Spain
and Morocco. (We depart for the Sacred Music Festival in
Morocco on the 27th of May. Join us and you can also visit
this enchanting gourmands heaven).
Moroccan
Berber Spice mixture (This is a very special spice mixture
that you can prepare in advance and store in the refrigerator
up to 1 week prior to using it)
½
tsp. Oregano
1 tsp. Salt
1 Tbs. Black peppercorn
½ Tbs. Coriander seeds
1 Tbs. Freshly grated gingerroot
Add a pinch of Saffron
3 tsp. Sweet paprika
4 cloves (whole)
1 tsp. Cumin ground or 2 Tbs. Cumin seeds
¼ tsp. White pepper
½ tsp. Fennel seeds
½ tsp. Cinnamon
½ tsp. Turmeric
mix
all ingredients in a small bowl and stir into stew.
Moroccan
White Bean Stew
4
boneless chicken breast, cut in strips
3 Tbs. Olive oil
1 medium sized onion, chopped
3 minced cloves of garlic
1 can (15oz) white beans (include liquid)
4 cups vegetable broth or low fat chicken broth
1 ½ cup chopped red bell pepper
1 ½ cup chopped green bell pepper
1 ½ cup diced red potatoes
1 medium sized butternut squash
1 can diced green chilies
2 ½ cup sliced carrots
2 ½ cup diced tomatoes
1 ¾ Tbs. Moroccan Berber Spice Mixture (See below)
Heat
oil in large pot. Sauté onion and garlic. Add chicken
strips and stir-fry until cooked (dont; brown) Add
all ingredients, including Moroccan Spice mixture, except
broth and white beans and cook about 3 to 5 minutes. Stir
occasionally. Add the broth, cover and simmer about 15 minutes.
Add beans , stir and simmer another 5 minutes or until vegetables
are tender.
Serves
8 people
